Rick’s Recipes: Spicy Corn & Tomato Salsa

Ingredients

  • 2 garlic cloves (crushed)
  • 3 tbsps lime juice (1)
  • 1 tbsp honey
  • 2 tsps salt
  • 1/4 tsp pepper
  • 1 tomato (seeded and diced)
  • 15 ozs black beans (drained and rinsed)
  • 1 cup corn (frozen, thawed)
  • 2 1/2 tbsps jalapenos (finely minced)
  • 1/4 cup red onion (finely diced)
  • 1 cup chopped cilantro
  • Tortilla Chips

Directions

  1. Combine garlic, lime juice, honey, salt and pepper and whisk together in a large bowl
  2. Add the remaining ingredients
  3. Chill for at least 2 hours
